About this Recipe
“Sopita is a favorite of mine, particularly on cold days. My Nana used to make this all the time for me. She’d even add zucchini as I got older requesting it. It’s a warm meal when I’m needing some comfort, or a great quick meal in the middle of the day too. My two sons’ younger years included sopita almost daily. They still ask for it now, being 13 and 16. It’s definitely a cherished comfort food”

Ingredients
- 2 Roma tomatoes
- 1 garlic clove
- 1/4 of an onion
- 1 cup of water + 4 more cups (divided)
- 1 tablespoon oil
- 16 oz. package of sopa noodles (shells, letters, elbows)
- 1 teaspoon garlic powder
- Salt and pepper to taste
Step-by-Step Instructions
Step 1
Add tomatoes, crushed garlic clove, onion, and 1 cup water to a blender. Blend until smooth. Set aside until ready to use.
Step 2
In a pot, add oil and heat to medium-low/medium.
Add sopa noodles. Stir frequently to brown them, until toasted, for about 5 mins.
Step 3
Add the remaining 4 cups of water, your tomato mix, garlic, salt, and pepper.
Cover it and bring to a low simmer. Simmer for about 15-20 minutes or until the noodles are to your liking.
Step 4
Add cilantro and/or salsa for garnish (optional). Enjoy!
